I believe there is some component in Cheddar that you have a very rare sensitivity to. In 8th grade science class, the teacher passed these strips of paper around for everyone to taste. Some students said they tasted very bitter and some said they had no flavor at all. The lesson was that certain people have the gene that makes their taste buds sensitive to the bitter taste of a certain chemical, and some don't. There are probably similar situations with our olfactory sense. To me, cheddar smells much milder than most cheeses. Limburger smells like human feces to me. Oh, and cheddar doesn't give me loose or watery stools or foamy gas, even though I've eaten more than two pounds of it at one sitting. :-) |
