Default Sweet Potato Pie

Could someone please send me an easy recipe for sweet potato pie. one
with no nuts or honey please. just an easy sweet potato pie filling.

Does coconut count as a nut? I have a great recipe for sweet
potato-coconut pie.

Google this group's archives for a sweet potato pie by cat voci. It is to
die for. BTW, does anyone know where cat is?

1.5 cups mashed cooked sweet potatoes. (I use leftover baked sweet
potatoes that have had the peels removed. You could boil also.)

1.5 cup firmly packed brown sugar

1 tsp. cinnamon (Or less. It doesn't have to taste strongly of

cinnamon.)

1.5 tsp. fresh ginger (Or dried. But fresh is worth it.)

1.25 tsp. ground nutmeg

1 cup evaporated milk (Not condensed. Cream would substitute.)

1.5 cup flaked coconut (Not the sweetened kind. Go to the health
food store.)


Bake at 400 degrees in an unbaked 9" pie shell for about 35 minutes or
until a knife inserted in the center comes out clean.


Garnish with whipped cream and more flaked coconut.

Thank you, Julia. And thank you for the info on substituting the evaporated
milk - it is extremely dificult to find here (but flaked coconut is sold in
most supermarkets).

The recipe is different from anythig I've ever eaten. It's on my cooking
wish list now.
