Thanks. Take your standard pumpkin pie recipe and just substitute sweet potatoes... it works just the same way (and to me it tastes the same too... the difference is really semantic). I agree that sweet potato can easily be substituted in a pumpkin pie recipe. Howeer, I don't think they taste at all the same. I love both, but I can definitely tell the difference. Also, many sweet potato pie recipes call for a significant amount of butter, 1/4-1/2 cup, which is seldom seen in pumpkin pie. -- Wayne Boatwright @¿@¬ _____________________ |

You could boil also.) 1.5 cup firmly packed brown sugar 1 tsp. cinnamon (Or less. It doesn't have to taste strongly of cinnamon.) 1.5 tsp. fresh ginger (Or dried. But fresh is worth it.) 1.25 tsp. ground nutmeg 1 cup evaporated milk (Not condensed. Cream would substitute.) 1.5 cup flaked coconut (Not the sweetened kind. Go to the health food store.) Bake at 400 degrees in an unbaked 9" pie shell for about 35 minutes or until a knife inserted in the center comes out clean. Garnish with whipped cream and more flaked coconut. And thank you for the info on substituting the evaporated milk - it is extremely dificult to find here (but flaked coconut is sold in most supermarkets). The recipe is different from anythig I've ever eaten. It's on my cooking wish list now. |
