Default new jam

I needed to use up a pineapple on the counter so I looked up a recipe for
pineapple jam. I found a recipe that called for pineapple and very thinly
sliced lemon, I added orange zest, the juice from the oranges instead of water
and a great deal of freshly grated ginger. I call my invention "Hawaii 5-0
Jam"

It was pretty damned good.

Sounds almost like marmalade!!

I love pineapple preserves - it's my favorite. Often I buy them here
with apricots in them as well.
