Default Two, count 'em, two pot lucks in a week?!

We as a department had already planned a pot luck lunch for Monday, 10/6.
Then we get an email yesterday saying, for an early Bosses Day there will be
an I.T. pot luck on Friday, 10/10. That means the entire floor; over 100
people bringing food. Yikes!

I'd planned to take my spicy 5-bean soup on Monday. The recipe is simple,
hearty and filling, using mostly canned beans and prepared in a crock pot
(recipe below).

But suddenly we had TWO pot lucks to deal with next week. So we cancelled
ours on Monday. Question is, should I still take my soup? I know the
recipe doubles easily.

Spicy 5-bean Soup

15 oz. can red kidney beans
15 oz. can chick peas (garbonzo beans)
15 oz. can navy beans
8 oz. can green lima beans
9 oz. pkg. frozen cut green beans
2-1/2 cups beef broth
12 oz. beer
1-2 Tbs. Tabasco Sauce (to taste)
4 Tbs. chili powder
1-1/2 tsp. dried basil
1/2 tsp. dried oregano
1 small onion, chopped
1/4 c. uncooked pearl barley
1/2 c. shredded cheddar

Drain and rinse the beans and place them in a crock pot. Add the broth and
stir in the seasonings and onion. Cook on HIGH for 4 hours. Stir in the
barley; cook an hour more or until the barley is tender and has thickened
the soup. Serve sprinkled with shredded cheddar and season with hot sauce
as desired.

Sounds like a winner...I think I'll make it myself as it is "soup" weather
finally. I'm getting oneof those little deep freezers next week (from a
friend in the food biz who doesn't need it any longer), so I'll make some to
freeze, too....

Greg, I've never tried to freeze this soup so I'm not sure how the beans
will come out upon thawing.

Good point. One could always puree it, I guess ;--)

[made a big pot of chicken gumbo last night...am just about to make coleslaw
(found cabbage at 10 cents/pound) and from - scratch cornbread...autumn SURE
does bring out the "cook" in me! Tomorrow: a broccoli/cheddar 'bake"! My
pals should be happy when they come over tomorrow ;--) ]

The soup sounds great. I don't think it would work very well at a pot
luck since it requires a seperate dish. You can't put just a spoonful
on the plate with everything else.

Kathy

Do the grape jelly meatballs and freak Nancy out.
Lasagna roll-ups are good too.
Bet nobody brings tater salad or cole slaw.
One of those pulled pork in a crockpot recipes might be a thought.

Yeah, but that still gives you a plate, a bowl, flatware, a napkin and a cup
to juggle. Unless the soup is at the very end of the line most people are
going to pass it up because it's too hard to have to find a place to set the
bowl down so you can add something else to your plate.

I'd save the soup for the smaller pot lucks and take something that can be
served on a plate with everything else for the bigger pot luck.

Girl, you don't know the people I work with. They will juggle plates,
bowls, smaller plates with desserts, go to their desk, set everything down
then go back to get what they missed! This isn't a fancy buffet where you
feel you can only take as much as you can carry in one trip ROFL
