Default Tamale heaven :-)

My co-worker's sister recently moved here from Oaxaca, Mexico. Today I was
gifted with 4 dozen of her homemade tamales in appreciation for a favor.
There are a dozen each of shredded pork with roasted green chile, black bean
and cheese, green corn with red chil, and chicken in mole poblano.

I had tasted some of these once before when my co-worker brought some in for
a potluck, and these have to be the best tamales I have ever eaten!

I'll divide them in portions of one each of the four and pop into the
freezer. Those meals will be something to really look forward to.

oooo..you don't KNOW what you are missing. Living in Honduras, we have
a bit different style oftamales than in Mexico. Corn masa ans sweet
corn is used in the dough. They are larger, the wrappers are banana
leaves instead of corn husks and they are layered in a few inches of
boiling water to steam. The sough is almost custard like in texture.
The ones I like best have pork, raisins, some onions and green peppers
in them. There is another variety called a motuca which is pork pieces
spiced with cinnamon and wrapped in a slightly sweet masa also spiced
with cinnamon. Sunday, the local grocery store sells home made
tamales...the owner contracts with a woman to make them and they are
abolutely the best. Christmas is coming and we will be overloaded with
tamales...everyone makes them and gives them to friends.


OMG, I would love to taste some of those!

You really must try some. There is nothing quite like a tamale, and there
are so many different types.

I selected and installed a computer and peripherals for them. A no-brainer
for me, but difficult for them. I was happy to do it, and really never
expected anything in return. Needless to say, I was happily surprised!

But congratulations on your good fortune even if I'm too far away to
get a taste.

Surely you've heard the weather forecast, "Chili today, hot tamale", no?

So look forward to tamale - it's worth waiting for.

Tamales are, at their best, the ultimate comfort food, imo. A friend of
mine used to say with great gusto, "The worst sex I ever had was
excellent!" That pretty much sums it up concerning my experience with
tamales. I envy folks that have ready access to them, freshly made, as
the OP described, and I keep looking...

We get some really awesome Mexican food sometimes. Sometimes we get it
free and sometimes we buy from somebody. It's always excellent though.
Normally somebody makes tamales at Christmas and Easter and enchiladas
and burritos at other times of the year. There are some good Mexican
food places here but homemade is always best.

Mexican places here, too. but, as you said, homemade is always best.

We get some really awesome Mexican food sometimes. Sometimes we get it free
and sometimes we buy from somebody. It's always excellent though. Normally
somebody makes tamales at Christmas and Easter and enchiladas and burritos
at other times of the year. There are some good Mexican food places here
but homemade is always best.

Speaking of tamales, I truly love them but one thing I
can't stand is when they've added sugar to the masa. Throws
the whole thing out of kilter. Unfortunately, some homemade
tamales use this approach.

Ohmygawd. You're kidding? I've never heard of such a thing! These were
for savory tamales, not dessert ones? Thankfully never had any that I
was aware of sugar in the masa. It just sounds disgusting.

I'm in Kansas. Home of several beef packing plants. The population is
about 50% Hispanic, some recent and some that have been here several
generations. They can all cook!

A funny thing happened last week when we were getting ready to pay our check
at the Mexican food place we eat at every week. I caught the manager
ordering from Sonic!! He said "sometimes you just *need* a shake!" LOL
Sonic is a fast food drive in place.
