I had tasted some of these once before when my co-worker brought some in for a potluck, and these have to be the best tamales I have ever eaten! I'll divide them in portions of one each of the four and pop into the freezer. Those meals will be something to really look forward to. I discovered yesterday that I have a Mexican grocery about a block from my house that makes tamales and has them in the cooler. I was thinking that I should have some for lunch today but have never cooked them. Any preferences? They look like they should be steamed to me, but I imagine baking would be fine, too. Also, they seem like they should have some sort of sauce of other accoutrement. I imagine a simple salsa would do, but I'd like to do something that's as quick, but better. Any ideas? I think I'll do some homework tonight and "research" tomorrow... Hasta, Curt Nelson |

I make tamales every year and have never put sugar in the masa. Monday is
Tamale day for my friend and me. We usually do it around Christmas, but this year decided to take advantage of the kids' whole week off for Thanksgiving. Lynne "Steve Pope" wrote in message ... Speaking of tamales, I truly love them but one thing I can't stand is when they've added sugar to the masa. Throws the whole thing out of kilter. Unfortunately, some homemade tamales use this approach. Steve |

"Wayne Boatwright" wayneboatwright_at_gmail.com wrote in message 28.19... We get some really awesome Mexican food sometimes. Sometimes we get it free and sometimes we buy from somebody. It's always excellent though. Normally somebody makes tamales at Christmas and Easter and enchiladas and burritos at other times of the year. There are some good Mexican food places here but homemade is always best. Ms P Where are you Ms P? I'm in Apache Junction, AZ. We have some great Mexican places here, too. but, as you said, homemade is always best. -- Wayne Boatwright I'm in Kansas. Home of several beef packing plants. The population is about 50% Hispanic, some recent and some that have been here several generations. They can all cook! I bet there are some great places to eat, not to mention Hispanic friends. A funny thing happened last week when we were getting ready to pay our check at the Mexican food place we eat at every week. I caught the manager ordering from Sonic!! He said "sometimes you just *need* a shake!" LOL Sonic is a fast food drive in place. We all *need* a shake now and then. :-) -- Wayne Boatwright __________________________________________________ A good man has few enemies. A ruthless man has none. |

Save me some. ;-) Actually I'll be making tamales this year at Xmas time. My cousin's ex-wife sent me a couple of tamale "kits" from San Antonio. Now, I've made my own tamales for years and have excellent recipes, so I'm a little skeptical about using the seasoning packets that came in the kits. However I'm curious about how they taste. I can't decide whether to just use the corn husks and make my own version of masa and filling or take a chance and use the kit. It has 2 bags of spices - one for the masa and one for the filling. I've never heard of putting spices in the masa before. It might be good. Both bags of spices look similar. They're both mainly ground chiles. I hate to do all that work and then have them not turn out good if I do try the kits. It's a quandry. Well, I've got a while to decide.
