Saw it on TV this arvo, it's one I'll be trying shortly.


HONEY AND MACADAMIA CINNAMON TEA CAKE

Ingredients

" 250g butter
" 300g honey
" 6 eggs
" 100g plain flour sifted
" 300g self raising flour sifted
" 310ml milk
" 240g ground macadamia nuts
" 100g castor sugar
" 2tsp cinnamon ground
" 2tsp extra butter
" 50ml extra honey
" 1 orange peeled and cut into rounds

Method

1. Cream butter and honey and add eggs one at a time.
2. Fold in flours and when all incorporated, fold in milk.
3. Fold in nuts, half the cinnamon and half the sugar.
4. Bake in a well greased 26cm spring form tin at 160C for about 1½
hours. Let sit for 10mins to cool. Turn out and cool on a wire rack.
5. Combine remaining cinnamon and sugar.
6. Melt extra butter and brush over the cake.
7. Dust cake with the cinnamon sugar
8. Drizzle with extra honey
9. Garnish with halved orange segments (or tamarillo 1/4's)
