REC: Pumpkin-Chocolate Chip Brownies
Ingredients:
2 beaten eggs 1/2 c melted butter 1 c packed brown sugar 1/4 c honey 1 Tbsp vanilla 1 c pureed pumpkin 2 c flour 1 t cinnamon 1/2 t baking powder 1/2 t ginger 1/2 t salt 1/4 t nutmeg 1/4 t allspice 1/4 t cloves 1 c pecans 1 c chocolate chips (I used 1/2 c hersheys special dark and 1/2 c nestles semi sweet) 1. Cream together eggs, butter, brown sugar, honey, vanilla, and pumpkin. 2. Seperately, mix flour, baking powder, and all spices. 3. Add dry ingredients to wet in 2 increments, mixing between each. 4. Fold in pecans and chocolate chips. 5. Grease or spray a 9x9 baking pan. Spread the mixture in the pan and bake in preheated 350 degree oven for 30 minutes or until a toothpick comes out clean. These were oringially frosted with this weird goop that didn't work. I like them as-is, but they can be jazzed up with maple-cream cheese frosting or a white icing. I'm sure chocolate frosting wouldn't hurt, either =) |
