Default Spiced Chicken With Couscous Pilaf

From an old Cooking Light Magazine. Torn out page doesn't have a date on
it, but I'm guessing around 2001. That's when I had a subscription. For
you weight watchers this was 8 points a serving and it was really good.
Easy to make also.

Spiced Chicken With Couscous Pilaf

2 1/2 teaspoons paprika
1 teaspoon dried thyme
3/4 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground red pepper
4 skinless, boneless chicken breast halves
(4 ounces, each)
1 tablespoon vegetable oil, divided
1/2 cup chopped onion
1 garlic clove, minced
1 cup uncooked couscous
1 cup fat-free, less-sodium chicken broth
1 cup frozen whole-kernel corn
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
Cilantro sprigs (optional)

1. Combine first 7 ingredients in a shallow dish. Dredge chicken in paprika
mixture.

2. Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add
chicken, and cook 5 minutes on each side or until done. Remove the chicken
from pan. Keep warm.

3. Heat 1 teaspoon oil in pan over medium-high heat. Add onion and garlic;
sauté 1 minute. Stir in couscous and broth; bring to a boil. Remove from
heat. Stir in corn; cover, and let stand 5 minutes or until liquid is
absorbed. Stir in the minced cilantro and lime juice. Serve with the
chicken. Garnish with cilantro sprigs, if desired. Yield: 4 servings
(serving size: 1 chicken breast half and 1 cup couscous mixture).

After looking at the list of ingredients, have it knighted "Sir Kitchen
Sink Chicken".

Say that 10 times, fast!

Kidding aside, I'm going to try it, only with orzo (I still have teeth).

not sure what pouspous is but I could probably stand some with some
butter on it.

sorry, i may have missed any mails, pork belly futures fell through the
floor and, well, I had to do a few workarounds, i just simply shit
canned all 475 emails that lay there.
so hard to sort through them

you'd probably find a great interest in my current works...
nothing major.. but.. probably something you might hear in a science

I won't say exactly what im up too (not on here) it would invite too
many laughs, but see..
I have this feeling that the world is not flat so to say...
I believe there are many things that we have not discovered

but lemme say, I do believe in kenetics.. if I understand that word
correctly.

hell I'll tell this much.. me and 2 other friends, we actually moved a
coin with our minds
oh yes we did.. it moved. we was trying to move it.. and it moved.

so my studies and interests have just kept me occupied, lol

up up up and awaaaaay!

I can't wait!
