Default Pickling vegetables

Any recommendations on pickling vegetables? I curry pickled some
cauliflower this past weekend, and am not really interested in pickling
cucumbers. Any suggestions?

This is probably the last answer you want to hear but I say..... Okra!!!
We put some up last weekend and should be ready the end of Oct. They
really are good but not to many people like okra. I really enjoy them.
The recipe we used was the same as for what is called "dilly beans". You
could try that but I still say Okra!

I don't do much pickling, but my favorites that I buy (other than pickled
cukes) are pickled okra, asparagus, carrots and green beans.

I love pickles! Pickled Veggies, Pickled Eggs, Pickled Pigs Feet, Anything
Pickled!!!

Just some ideas I thought I'd throw your way.

Then they don't know what they're missing. Here in NC we have okra served
in many, many forms. I'm partial to fried, but love it steamed as well.

I really enjoy them.

In season, we've pickled all of the following with great results:
Asparagus, green & yellow beans, peppers (both hot & sweet),
cauliflower, eggplant, garlic, beets, pearl onions and snap peas.
Not to mention your eliminated cucumbers which make great pickles,
i.e. dills, curried dills, sweet pickles, mixed mustard pickles, mixed
curried pickles, etc.
Take a look at rec.food.preserving.
