Any recommendations on pickling vegetables? I curry pickled some

They really are good but not to many people like okra. I really enjoy them. The recipe we used was the same as for what is called "dilly beans". You could try that but I still say Okra! In season, we've pickled all of the following with great results: Asparagus, green & yellow beans, peppers (both hot & sweet), cauliflower, eggplant, garlic, beets, pearl onions and snap peas. Not to mention your eliminated cucumbers which make great pickles, i.e. dills, curried dills, sweet pickles, mixed mustard pickles, mixed curried pickles, etc. Take a look at rec.food.preserving.
