Default Asparagus and Eggplant Rollups

Grilled Asparagus and Eggplant Roll Ups

Serves 4
Active Time: 10 min
Total Time: 45 min

1 eggplant (about 1 lb), ends trimmed, cut lengthwise in 1/2-inch thick
slices (about 8)
1 bunch asparagus (about 1 lb), ends trimmed
2 Tbsp Basting Oil

Preheat grill on HIGH for 10 min. Arrange eggplant slices on baking
sheet;
sprinkle with salt. Let stand 30 min. Pat with paper towel to remove
moisture.
Drizzle eggplant and asparagus with basting oil. Salt asparagus to
taste. Arrange
vegetables on grill; cook about 2 min. Turn. Continue to grill until
browned
and pliable, about 2 min longer. Remove from grill and cool slightly.
To
assemble, arrange asparagus spears on top of eggplant slices; roll into
bundles.
