Arrowhead Quinoa Tabouleh

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 c Cooked AM Quinoa
1 c Chopped parsley
1/2 c green onion
1 Garlic clove -- pressed
1/2 ts Basil
1/2 c Lemon juice
1/4 c extra virgin olive oil
1/8 ts salt
1/8 ts pepper
Whole lettuce leaves

Mix first 9 ingredients and place in a salad bowl lined with washed
lettuce
leaves. Refrigerate for at least two hours to let flavor blend. Fresh
mint
and black olives make nice garnishes for this dish.

Quinoa is 69% carbohydrates by difference with 6% of that being fiber.
Increasing the parsley would lower carb count.

254g carbohydrate per recipe with 24g fiber and 48g protein
