Breakfast on the Run Muffins

Serving Size : 6 Preparation Time :0:15

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
6 large eggs
1/2 cup heavy cream
salt and pepper -- to taste
12 bacon strips -- crisp
6 ounces cheese

1. In a bowl, scramble the eggs with the cream and salt and pepper.

2. Pour into Pam-sprayed muffin tins. Regular or jumbo sized works best.
Fill the cups 1/3 to 1/2 full only.

3. Add 1 strip crumbled bacon to each muffin and then 1/2 ounce cheese on
top of that. Bake at 350F for about 15 minutes or until slightly browned.

4. Store in an airtight container in refrigerator for up to 4 days.

5. Reheat slightly in microwave before eating.
