I got this recipe many years ago. It is quick to fix and can be changed up
many ways.

The original recipe was:

1 lb. ground beef
1 pkg. O'Brien potatoes (frozen potato cubes with peppers and onions)
1 jar salsa

Brown the ground beef and remove from skillet. Cook the potatoes in a
little oil until browned then add the ground beef back in and the salsa and
cook until heated through.

I usually make changes to this recipe by adding more ground beef, more
salsa, more onions and peppers, and sometimes some hot peppers or chili
powder. It could be made with cubed or shredded chicken or leftover roast
beef. If you can't handle potatoes, you could simply use some chopped
onions and peppers and leave those out.

We're having this for dinner tonight. It's very good!

The O'Brien's are 13 carbs 2g Dietary Fiber ,1g sugar per 3/4 cup......
About the Salsa you could probably just make the ground beef and potatoes
...then add a couple of Tbsp of Salsa...Old El Paso Thick and chunky salsa
is 3 carbs per 2 tsp. of salsa. The Old El Paso Salsa Garden Pepper Make
Mine Medium is 2g carbs per 2 Tbsp. LA VICTORIA Thick 'N Chunky Salsa, is
1.3 g per 2 tbsp. I think this recipe can be adjusted to please the
Diabetic. I can eat some potatoes without spiking but not rice so guess
we
have to depend on our meters for this one.
Thanks Julie..I will try this one...I'm sure hubby will like it...I might
try it with ground chicken or maybe shredded or diced. Let me know how
your
numbers did on this one.

My numbers were not good today, but I didn't test prior to eating and I
suspect I was too high before I ate. This morning I woke up and tested as
hypo. I didn't believe it because I didn't feel bad so I tested again and
it said Lo. I think I ate more cereal than I should have, but again, I
didn't test after. I was not feeling well because I've been sick.

Normally I can eat a cup of this with no problems.

With potatoes and tomatoes, no matter how low the carb count, many, if
not most of us, spike out of all proportion.

No doubt it's a very tasty recipe, I just don't think it comes close to
being a diabetic recipe.

And Many of us don't...I think people can make their own choice.

True, some diabetics can eat bananas, potatoes, and various other
things, but banana cream pie, and potato recipes, aren't what I
consider to be diabetic friendly recipes, and I would say so. YMMV,
and there's no problem with posting the recipes or anything, but there
shouldn't be a problem with someone pointing out that they're not
necessarily diabetic friendly either. JMO

My dear Susan..... you must think my powers of control and pursuasion

over
this man are far greater than they are. He was told NOT to low carb

by his
kidney stone doctor, and he was given the avandamet by his internist,

just
recently. In fact he only just finished the sample meds. I assure

you I
will have much to say about it, but it is all too new.

I agree with you about controlling somebody elses behavior Evelyn.
It's not something that can easily be done, especially when something
is new and one is trying to change a lifetime of eating a certain way.
It's quite overwhelming in the early days, and I wish your hubby the
best. Small changes at first can be a good thing...before you drop the
hammer. ;-)
