I got this recipe many years ago. It is quick to fix and can be changed up
many ways. The original recipe was: 1 lb. ground beef 1 pkg. O'Brien potatoes (frozen potato cubes with peppers and onions) 1 jar salsa Brown the ground beef and remove from skillet. Cook the potatoes in a little oil until browned then add the ground beef back in and the salsa and cook until heated through. I usually make changes to this recipe by adding more ground beef, more salsa, more onions and peppers, and sometimes some hot peppers or chili powder. It could be made with cubed or shredded chicken or leftover roast beef. If you can't handle potatoes, you could simply use some chopped onions and peppers and leave those out. We're having this for dinner tonight. It's very good! |

My numbers were not good today, but I didn't test prior to eating and I suspect I was too high before I ate. This morning I woke up and tested as hypo. I didn't believe it because I didn't feel bad so I tested again and it said Lo. I think I ate more cereal than I should have, but again, I didn't test after. I was not feeling well because I've been sick. Normally I can eat a cup of this with no problems. |

With potatoes and tomatoes, no matter how low the carb count, many, if not most of us, spike out of all proportion. No doubt it's a very tasty recipe, I just don't think it comes close to being a diabetic recipe. Susan |

True, some diabetics can eat bananas, potatoes, and various other things, but banana cream pie, and potato recipes, aren't what I consider to be diabetic friendly recipes, and I would say so. YMMV, and there's no problem with posting the recipes or anything, but there shouldn't be a problem with someone pointing out that they're not necessarily diabetic friendly either. JMO Cheri |
