We had guests for dinner the other night. She is a Vegetarian, but not a
Vegan but her DH and my DH are carnivores and we are all watching carbohydrate intake. I wanted to make something that would keep them all happy. My local market sells frozen grilled eggplant slices in a large plastic bag. All they need is to be heated and served. I defrosted a bag of these by layering them on a paper plate between sheets of white paper toweling. I cut the peel from around the edges of the slices. Using a small, oblong, Pyrex baking dish, I sprayed it with cooking spray and put a layer of eggplant on the bottom. I added a layer of my favorite lasagna cheese (to follow) and topped it with the rest of the eggplant. I covered that with about 1 cup of Classico brand tomato & basil sauce (no added sugars or sweeteners) and a mixture of shredded low-fat mozzarella cheese, Parmagano Reggiano and Locatelli Romano. Cover the dish with aluminum foil and place in a 350 degree oven for about an hour. Remove from oven, remove foil and let cool for 5 minutes or so. Cut into squares and serve. Made 6 servings. The cheese: 1 15 oz container low-fat ricotta cheese 1 egg 1 tablespoon minced fresh parsley 1 tablespoon grated Parmesano Reggiano cheese 1 tablespoon grated Locatelli Romano cheese 1/2 cup low-moisture, part-skim shredded mozarella 5 gratings of a fresh nutmeg salt and pepper to taste Even the leftovers were good the next day. ---- Janet Wilder Bad spelling.
