Default Quinoa Pasta

I got some of this at my health food store and it's really quite good.
Tastes much more like wheat pasta than the rice or corn pasta does. I have
to buy alternative pastas because of food allergies. Anyway... Quinoa is
high in protein and fiber and is purported to work better for diabetics than
some other grains. It works for me anyway. You might want to give it a
try.

I think quinoa is actually a seed. I bought some last year and both times
that I tried it, my BG went crazy afterward and I threw it out. I just
bought another box and I'm going to give it another try, in case my body was
just going through a weird phase last time. I'm type 1 and handle carbs
well, but some things are almost impossible for me to get right. Corn bread
is another food that is a mystery. Any other kind of bread or muffins I can
do, but cornbread (homemade, even) messes with me. I have no problems with
actual corn.

I can't do cornbread either. I think a lot of it has a lot of sugar in it.
I can do Gorditas though. But the recipe I have has just a tiny bit of
sugar for the whole thing. I have to watch my portion size though.
