Hello
I'm seeking opinions on the electric knife sharpeners made by Chef's Choice. Naturally, their ads claim that they do a wonderful job, but I'd sure appreciate some unbiased recommendations as to how well they work ! Thanks for any help! Knox G. |

I have a Model 110, and it works fine, though I seldom use the third
'final' stage. It seems that the small amount of 'tooth' left on by the second stage helps, at least with my chef's knives. I recently spoke to a cooking store owner, who also runs a knife sharpening business, and he says the model 120 is better, but not enough for me to chuck my 110 for. I've had the two-stage Chef's Choice for about 4 years. It works well enough, especially on a stamped commercial style knife that had no bolster. On knives with bolsters, it's impossible to get closer than a 1/4" to the bolster, eventually leading to an uneven edge. Some have suggested removing the plastic housing to eliminate this problem. I also didn't like how much material it removed. I've switched to a two-stage crock stick sharpener. It's fast, works extremely well - the knives seem to have a bit more "bite", and is easy on the blades. Plus, I like my hands doing the work. I definitely feel like I have more control. Best of all, cost is 1/2 or less. Others in the group have mentioned the diamond or ceramic "steels". But just like a steel, it's up to the user to get the proper angles consistently. They do a pretty good job - I had one for several years. If you want an electronic gadget to do your sharpening they are probably your best bet. But they do not give the edge that skilled manual sharpening will. I've had one for years and like it. It's faster and easier then sharpening
by hand, therefore I do it often enough to keep my knives sharp. Before owning this tool my knives had to get fairly dull before i was motivated enough to sharpen them. --Brian "Knox Graham" wrote in message ... No where near doing it the "old fashioned" way but not really too bad. |

My review is he http://www.ameritech.net/users/knive...tm#chefschoice Steve Steve - We were recently given a Henckels Pro-S Santoku, with the hollow-ground blade. Can it be sharpened on a Chef's Choice 120? Seems that any sharpening process that removes metal would eventually cause problems on a knife like that. |
