Default Viking stand mixers

Looking at getting a stand mixer. There's the old standby KitchenAid
units, and now I see Viking (the range/oven people) have a stand mixer.
I seem to see a lot of slagging of KA mixers, what about the Viking? I
think it may be new enough to not have much of a history.

I haven't used a Viking, but it seems to be based on the (formerly)
British Kenwood. I have both an old (Hobart) KitchenAid and a Kenwood.
I like them both. The dough hook on the Kenwood and the Viking, I
find superior to the KitchenAid, even though I've replaced the original
KA dough hook for the newer style.

I have both KA 4.5 qt[tilting bowl] and the 5 qt models[elevating bowl]. I
feel they are both marginal. When kneading bread dough the smaller mixer
bounces around the countertop. It would fall to the floor if I didn't hold
it. It works best with an optimal amount of flour, about five cups with the
smaller unit and about six cups with the larger one. They both require
constant scraping on the sides of the bowl of unkneaded flour while mixing.
My old Breadman breadmaker kneaded with far less fuss by itself. Over
kneading is more easily controllable with the timer. You can walk away while
you're making dough. I rarely used it for breadmaking.
I'd look carefully at the look-alikes if you must have that kind of mixer.
Best of luck with your search,

Kent
