Default space between grates

Hi there,

I'm building a new horizontal offset smoker using an old beer barrel
(1000 liter (264 gallon), length 170 cm (67 inch), diameter 90 cm (35.4
inch) ). I'm having trouble deciding how many grates I will put in it.
2 or 3 levels. How much space is there between te grates in your
smoker?

Adriaan, you can put 3 levels with no problem and have 15.24 cm (6")
between each level. You can put whole 5# size chickens, pork BUTTS and
briskets on each shelf. If the levels are only 12.7 cm (5") apart you can
still get whole chickens, BUTTS and brisket on them. At 10.16 cm (4") you
can do chicken ½'s and ribs.

thanks for your advise. I was thinking of 20 cm (7.8) between the grates,
but if the master says 6 inch will do, I will follow you advise. for those
who do not know what a 1000 liter beer barrel looks like, here is a link
with an idea of what I'm building

Hej Adriaan,
Weet jij hoe je "rookvlees" (net als van de slager) kan maken ??
Wat voor vlees is het ? Ik heb mijn eigen smoker, dus kan
waarschijnlijk goedkoper zelf maken.
Er is alleen maar een winkel hier die het te koop heeft.
En hardstikke duur ook nog !!!

eindelijk, eindelijk, een hollander die een smoker heeft. ze schijnen
zeldzaam te zijn. stuur even een berichtje naar mijn hotmail account,
dan hou ik je op de hoogte.
er zijn verschillende soorten rookvlees, maar meestal van rund of
paard. hoewel gerookt valt het eigenlijk onder rauw vlees. het wordt
gezouten, meestal droog (of onder vacuum om het proces te versnellen,
maar meestal niet in een pekelbad. ik heb begrepen dat het zouten weken
kan duren waarna het vlees soms nog gedroogd wordt voor het koud te
roken.
ik zal op zoek gaan naar het recept. ik gebruik het zelf niet omdat de
buren een rookperiode van dagen niet op prijs zullen stellen.
