The wife wants goose for Christmas. This would be my first goose in the

I'll be doing another goose this year too. A couple things.

First, you'll have the same problem smoking goose as most
other poultry. If your temp is too low the skin won't be
any good. Anything below about 300 F, and even at 300 the
skin won't be very crispy.

My approach is to do a two stage cook. 250 F in the smoker,
then 350+ F indirect on the grill. You can also finish in
the oven. Your final temp should be about 170 F in the breast,
a little higher is OK. I always brine, but it's not
a requirement because it's all dark meat.

The thing will throw off huge amounts of fat, so be prepared.
Expect about 4-6 cups from a 12 pound bird. Save it if
you can, it's great to fry stuff in.

Goose have a gigantic cavity so they're a natural for
stuffing. You actually end up with enough stuffing to go
with the meat, unlike chicken or turkey. I like a apple/sage.
No sausage stuffing here because they're already so much
fat. This year I'm thinking of adding in some wild rice.
Cornbread works well too.

You could skip the smoker and just roast it, but there's
nothing like smoked goose. I say give it a shot.

Seriously I've Googled "smoked goose" and came up with very little. Basiclly
the ones I've found say to get a goose, season it, some say prick the skin &
some don't, put in smoker for anywhere for 1 hour (total) or 1.5 hours per
pound.

Some say goose is very fatty others say goose is very lean. Don't say smoke
it like a duck or pheasant because I haven't done a duck or pheasant. This
would be my first goose.

I wondered if anyone has done a goose on a smoker and what tips can you give
me on how to do it. Do I brine, like other poultry? What temp do I take it
to? One place said 160 another said 180. They never did say where to take
the temp from.

Am I blazing a trail? I'm so confused!

Farm raised geese, i.e. what you'll get from the store, are extremely
fatty. Wild are much leaner.

Yes, I see that in recipes a lot. It works better in a pit
fortunately.

I use a mixture of 2 parts tea, 1 part rice, and 1 part
sugar.

Actually, this thread started out as a pretty decent discussion
about goose. It descended into a name calling, sure. And race
baiting, and even a deep, meaningful discussion about nuclear
weapons.

The volume here used to be higher, but are things really worse
off then the days of, fer instance, the CAL wars of 03'?

Or was it 04'?

I've adapted. I just bail out on threads early before things
go south.
