Default Barbecue and Thanksgiving

Does anyone have any good barbecue recipes for Thanksgiving. My wife
is a horrible cook, and I only like doing my cooking over a flame.
We've got a whole bunch of folks coming over. Any ideas would be just
great.

What do you have for a cooker?

I've got a large homemade wood burner - made out of an adapted 55
gallon drum - for roasting pigs. Our main grill is a gas powered Weber
with six burners. It definitely is large enough to put a turkey in.
I'm hesitant though because I've never cooked a bird so large in my
grill.

Try the turkey on a rotisserie. Put a long, narrow pan near the edge to
catch the drippings. Use a thermometer to get the temp to 180. or Try
deep frying. 80 minutes for a 20 pound bird.

If you can maintain a temperature of 350 +/- for the time it takes to
roast a turkey, you can do it in either device. I recommend the pig
cooker and a big turkey. I've done a 25# turkey in my Kamado. It is
+very+ easy to maintain temperature in a Kamado.

Get a good, big ham to cook at the same time. Then you will have all the
bases covered.

Because of my limited experience with gas grills, I suggest using your
wood burner. Get the temp to 325° and let it cook till the breast is at
165°. Another poster suggested 180°. That is a common recommendation,
but a common complaint is dry turkey too!!!

I use lump charcoal and for poultry use applewood for smoke. Simply
delicous. Unstuffed turkeys cook fast. I did a 15 lber last year and
think it was done in 2.5 hours.

I will be doing my turkey on the spit over lump charcoal. I'll brine
it first to make sure it stays moist and cook it until internal temp
reaches 160.

the BBQ bible says never, never try something for a crowd till you tried it
yourself before......that said, here is the the surest way to do a smoked
turkey....seen the beer can chickens......just get a bigger beer can as in
16 oz or fosters size....smoke the same way....if Howard Stern under the
guidence of Steve Richman can do it, u can too.....damn near impossible to
mess it up....done many of turkeys this way, never a dry out one
yet.......good luck and Happy Thanksgiving...
