Hi all,
Bought one of these the a while ago and have used it whith good success. My question, do you "HAVE" to put water in the pan? I have seen and read that water vapor will mess with good BBQ. I was thinking of doing a butt and want good results. Drop the water? Mark |

I had the same unit, cooking without water will speed the process. I should mention that I do use the water at the point the food is cooked. I use the water to slow or stop the cooking and to prevent the food from drying out. Lets say the ribs are done but dinner is 2 hours away. I drop the thermostat and add some water to the pan.
