Well it has been awhile since my wife and I have visited Pork Mecca in
Georgia. I ended up freezing the chops, butt and shoulder given to us by our gracious and generous host and hostess (in case you are confused: Bob N Ginger). I have since removed the chops from the freezer in order to actually consume them. I was also doing turkey breast ala TFM brine and set aside some of the brine for the chops. I'd done this before with store bought chops with good results. I do have to say that the Pork Mecca chops were superior to the store bought chops that I've done in the past. There is something about the texture and juicyness of the PMC that is far better than store bought. Making me think that it would be a marvelous idea if B & G would open a butcher store in my home town! Beth Pork Mecca is the name of a place I have given to a lovely couple that live on a farm in Georgia. The couples names are; Bob and Ginger. And it is wonderful place that looks like Noah's Ark! Almost two of any kind of critter wandering around! They raise old fashioned hog without hormones, continous antibiotics, etc... and they have all the fat content of hogs from years gone by. They live 5 hours from me and that's not close enough!
