My bad. I came home from my Cardiac Rehab Exercise Session today
to find my double driveway blocked by some idiot with a minivan parked crosswise. I had preplanned to do stuffed pork chop, Tilapia filet, Orzo and Spinach as soon as I got home. Lo and behold, my wife's physical therapist was there and of course was the offending parker. Since I pretty much had everything prestaged, I got it all out and started heating the oven and a pan for the Orzo.Sorry for the lack of pic's on ABF. I was all assholes and elbows as it was. I had a two inch thick porkchop bought special to stuff, so I split a pockit in it and stuffed it with thin sliced onions and whole wheat bread cubes. Finally I drizzled the whole stuffing with EVOO to keep it from being to dry. Score one. Made a new saltless rub of paprika, onion, garlic and black pepper and coated the outside of that stuffed chop and tied it up. Put it on a wire rack over a drip pan and into a 350°F oven. I settled for a bread pan to do the tilapia filet. Put a layer of thin sliced onion in the bottom covered with 3 or 4 slices of lemon, then the filet, followed by more slices of lemon. Gave the filet the last 12 mins of the oven course and it was a little too much. (The filet was quite small and pretty thin). The Orzo which is a rice sized pasta was boiled in the usuall pasta manner. the spinach was heated in a boiler with a little water. The final plate was a winner, and I sure wish I had had the time to take pics. You'll just have to bear with me. It's hard enough to get food into my love without taking timeout for pics. The spinach was all I had for color. It really needed some red bell pepper or something to create visual appeal. Please pretend like this post was a picture.
