(usually with a cheap ham steak that I throw on the grill for a few minutes to give it a nicer flavor). Failing that, an old standby is to get some beef chuck, braise it with green chile until it almost falls apart, shred it, reduce the liquid until you get shreds of seriously spicy-chile-beefy meat, and then leave it in the fridge overnight, then make huevos rancheros or a breakfast burrito out of that and a couple of over-medium eggs.
