I have smoked BabyBacks twice this year. Ended up doing so two different
ways. Both came out about the same - very good! 1st - about 2 1/2 hours, meat temp hit 165 degress 2nd - about 3 1/2 hours, meat temp made it to 150 degrees. Both there was a nice smoke rind, internal meet was a nice brown well cooked color Any opinions? I have seen where some say 145 degress is good. Others 165. I do hold to - if I like how it taste, it is good (and if others Love it - which they did for both) so much the better, I do like to see what others think and to also consider what they (You All) think. Thanks (I amy someday Move Up to Spare Ribs - but am loving Baby Backs, and just don't worry about How Very Expensive and Hard to Find they are!) |

I find babybacks easier and faster too cook than spares. But my meat temps for both are around 185°. My experience with babybacks is that they can be cooked at temps from 250° to 325°. Spares, have been having a difficult time cooking at 300° and getting a result I am comfortable with. So, I have been dealing with just cooking them at 250° or maybe a bit higher and just allow the time necessary for a good rack of spares. Spares are always easy to find, ranging from .98/lb to 2.98/lb. Babybacks, OTOH, are not available all the time, but the price is generally around $6.00/lb. Maybe $4.00/lb at Sams Club buying a 3 rack cryovac package. Now mind you, this is after I told her we're both lesbians as we both enjoy intimate relations with females. The girl didnt bat an eye, seemed to like the concept.
