Default How to grill steak using a portable propane bbq

We have a portable gas grill. The grill doesn't seem to get hot enough =
and there are many hotspots. I was thinking of getting lava rocks/tiles =
to evenly distribute the heat but it doesn't look the grill can support. =
I was looking at the newer larger size grills and they don't look like =
the support rocks/tiles.

Most of the steaks I have cooked, unless rare take a long time too cook =
and are tough. I kind of think that maybe charcoal is better but in our =
apartment, we can't have charcoal grills.

What are some tips on grilling, say, a steak medium to medium well on =
portable grill? Am I to preheat the grill before starting to grill? At =
what setting? What temperature? 400F?

Hi Mark. Preheat, so ya get those nice grill marks and to let the steak
cook from the outside, rather than warming up with the grill. IMHO.

400F or higher sounds good ta me, but I like 'em very rare. ;~P

Forget the radiants.
Get a cast iron pan and preheat to very hot (in the oven if need be). Take
the pan outside and put it on the grill. Sear the steak on both sides in the
pan and then finish to desired doneness on the grill.

I lived for 11 years in a building that didn't allow any cooking on
the balcony. You can get good results with a cast iron frying pan.
Heat it up as hot as it will go and sear one side for 60 seconds. Flip
it and put the pan and all into a preheated 550 degree oven for 5 more
minutes. Let it rest for at least 5 more minutes. I was sceptical at
first but aside from all the smoke the results are good.

marks?

Why don't you try a cast iron grill pan so you can get some kind of grill
marks? I've had not bad luck with my $20 portable but it has a metal plate
above the burner to spead the heat.

Good idea, except the only way the pan can be taken outside from the =
oven is if it is actually heated outside. The inside smoke detector is =
sensitve to heat. Dunno if the sprinkler system would go off either.

Does anyone know how hot the grill can get?

Forget the CI grill, you want maximun crust like that which an IR burner at
Ruth Chris. Forget the pretty grill marks, go for flavor by increasing the
contact area

Hi, I am not sure what you are talking about. I never heard of Ruth Chris

Check ABF for pic's tomorrow. I'll make pic's of two grills, one is the CI
ribbed
type and the other is a flat pancake/egg grill. Both CI and heavier then a
MOFO.
Both are shaped to cover two burners on a typical kitchen stove.

Thanks, I cut and pasted my replies. I changed the characters to 70, but I
didn't notice much of a difference between 70 and the default 76.

I saw a cast iron ribbed grill at Wal-Mart for $29 Canadian. That's about $5
US ;-)
I believe that would be way to heavy for my portable bbq and inside the
apartment the heat alone from it would set off the smoke detector (even
opening up the oven door for more than 15 seconds sets it off).
