I haven't done an Imperial Stout. I do like my Belgiums though ;-

Antigo is my wife's home town. Her clan is from Madison and north up to the
UP. We met in Phoenix and just about 80% of her family moved there also.

PS. Marinating beforehand does nothing unless you fork the skin. You
didn't mention that so I wonder if your now why waste the beer.

PSS Yellow mustard is best for coleslaw and not fit for meats.

The pre-soak is just the way we always did it, but you must never fork the
skin. For that matter never us a fork or anything that will puncture the
skin while cooking. I don't know much about Madison, they don't let me into
town, I'm way too right wing for a lefty town like that!

Come to think of it, the pre-soak is no more or less a waste of beer that
par-boiling, you can buy pre-cooked brats in the store and save the step.
Anyway, that is what they make Miller, Bud, and Coors for, my homebrew is
better suited for drinking, not cooking.

Just to let you know I'm a bit strange when it comes to drinking beer and
food, I will not drink a good beer and eat at the same time. The food
screws up the taste of the beer. I drink beer before a meal, water with a
meal, and more beer after a meal
