Default Todays cook

The fires heatin' up in the WSM, the beans have been on the stove for 45
minutes, the briskets comin to room temp and ready to go, and its 6:25am.
Hell, the baby ain't even up yet.

I may be sicker than even my wife says I am.

Where's the beer?

It's now 8:18am an the butt has been on for about 30 minutes. The fire has
stabilized at 239 degrees and,
believe it or not, the sun is out. We'll see how long that lasts.

Default Todays cook



Now 1:42pm and the rain has stayed away. Lucky me. The brisket was sitting
at 150 internal in the flat about 20 minutes ago. Very inconsistent fire
today. Varying between 200 and 279. No rest for the weary, I'm afraid, as I
have to keep a constant eye on it. Can't even fit a nap in.

I have the butt directly above the brisket and its basting the beef with
dripping fat. Very nice.

I'm headin' out now to put the jalapeno and garlic stuffed pork loin on the
WSM. And to grab another beer.

The rain has arrived and its comin' in droves. I mean its friggin pourin',
man. The WSM's cookin at about 244 and things are still movin along, but I'm
afeared I'm gonna get a little wet after all.

I got rained out. Hail even. Fires going just fine, but I'm not going out
there with all those chunks of ice flying around. They hurt!

Pulled pork from the freezer for tonite and tomorrow...
