The fires heatin' up in the WSM, the beans have been on the stove for 45
minutes, the briskets comin to room temp and ready to go, and its 6:25am. Hell, the baby ain't even up yet. I may be sicker than even my wife says I am. Where's the beer? -- Fosco Gamgee Whitfurrows and his 6" boner runnin about an hour late so don't come over to early, y'all |

Now 1:42pm and the rain has stayed away. Lucky me. The brisket was sitting at 150 internal in the flat about 20 minutes ago. Very inconsistent fire today. Varying between 200 and 279. No rest for the weary, I'm afraid, as I have to keep a constant eye on it. Can't even fit a nap in. I have the butt directly above the brisket and its basting the beef with dripping fat. Very nice. I'm headin' out now to put the jalapeno and garlic stuffed pork loin on the WSM. And to grab another beer. -- Fosco Gamgee Whitfurrows and his 6" boner |
