I put about 5" of insulation on the smoker side of mine to keep in the
heat on windy and cool days. Would hate to get all that fiberglass
water soaked. BTW-the insulation works well-use a lot less wood.
Just don't put much over the firebox side-burnt a handle off-rigged up
a longer stand off for the handle-got too hot before.

Local slaughter house also gets 2.49/# for their whole fresh hams,
15-20# range. Is that a prevalent price for WFH. The WalMart version
has 23% salt/water/sugar added.

Getting time to uncover the smoker. Also looking forward to the local
festivals-several have smoked meat sandwiches and entrees. The pork
and beef producers have booths at several of the larger fairs. Time
to get out the PEETA tshirts also.


Whole fresh hams are 99 cents a pound at my meat store. Their briskets are
more expensive than Wal-Mart and always have been.

I gladly pay $1.48/lb for brisket when I can't fight the craving any longer.

It may be obvious but the atkins diet craze seems to be driving the prices
of beef up somewhat.
I have heard speculation that it could increase the quality of beef you can
get also.. I guess via the fact there would be more competition among
sellers if everyone wants beef so they would want to have the best. Also if
people are going to limit themselves to eating mainly meat then they are
probably going to want to do it up right and get good quality.

I haven't purchased a brisket yet as I'm not much for cooking in the cold
months but spring is here in TX. Cooked a steak and buffalo burgers last
week, maybe this weekend I will go buy a brisket to put on and I will see if
the price is higher than last years (if I can remember). It's damn cheap at
HEB here for a untrimmed brisket.. I wanna say it was under a dollar a pound
and I usually get 8-12 lbs.
