Well, I could have let it go a little longer, the smoke ring was
wonderful, nice bark...but it didn't pull in the center as nicely as it could have...but thats what I get for not getting my polder out of the storage unit last week. gotta get my supplies out this weekend. Anyway, it pulled mostly nicely and the beef is simmering in a nice tomato sauce with a bunch of chopped tomatoes, onions, peppers garlic and a decent burgandy (can't drink it anymore might as well cook with it). Not bad at all after several months off....YAY! Good job lil Joey! He's all tucked in for the night, expecting rain in the morning.... Jeanine and her lil smokin' joey! |
