Arrival Date - Today!!!

Damn, and the wife has the truck...now I gotta stare at it lustfully here at
work until tomorrow.

Pork butt comin' outta the freezer tonight!!!!

She came back about a week ago. She did go through some family trauma.
Her mother became ill and passed away.

Thanks Jeanine!

I unpacked the box yesterday, one of the three bottom vents was pretty badly
mangled. The rivet was pulled halfway out, and so there's no nice
intereference fit anymore. Called the folks at customer service, and a new
bottom section is on the way (at least I hope they're not just sending me a
new vent cover :-) )

Got a "free" grill cover in the box, too!

Mine arrived yesterday as well, had originally been slated to arrive
between 3/15 and 3/22 so I'm not complaining.

At least I know what I'm doing this weekend now.....;-)

Actually, yeah Brick, my mom got really sick in Oct, passed in
Dec...been dealing with that and I was diagnosed Bipolar t type 2 not
long after her funeral.....But I'm getting back to life, lil joey is
gonna get fed today!

I don't know about "typical" but smoking corned beef is pretty common.
With store-bought corned beef, it's a good idea to soak it overnight to
draw out some of the salt.

I know when people talk about Q'ing brisket, they mean an uncorned one.
I like cornbeef. And cornbeef can be made from brisket and other beef
products. With St. Patty's day very soon, cornbeef typically goes on
sale around here for $1.49 lb. or less. Though never seen it for the
..77 someone from this NG got'em for last week in So. Cal.

I recently talked with a butcher and he told me an untrimmed brisket is
$3.79. That is high, but I can't find it cheaper around here. Yet. I
will continue to look around for brisket at a cheaper price, and if I
can't get it cheaper, I may have to bite the bullet and pay the high
price. I do want to try a brisket on the WSM.

I really enjoy cornbeef and have never been able to get a cornbeef
sandwich like what I remember when I lived in So. Cal. So I have to
make them myself. That's OK with me.

BTW, my WSM shipped today. It is in NV right now, making it's way via
UPS to Minnesota.

Default WSM is here!!!

My WSM got here yesterday. One day earlier than scheduled. Box does
not look like it was banged around, so I am expecting all parts inside
to be in good shape. Will be able to assemble it Friday and cook in it
on Sunday (weather permiting). It rained today, clearing out much of
the snow.

First cook will be a 5 lb. boneless butt. Will cook till it's pullable.

Easy Q'en time for me REAL soon.
