Spud Well.............I reckon Kansas ain't got nothin' happening in the way of barbecue then.........bein's how they don't got the wood to make it. I concede, the part of Kansas you were in don't have BBQ wood. Evidently they're overrun with it somewhere or they wouldn't have the KCBS. Back to the subject.....elm burns. That's all I can say about it that's good. You'll never get a coal out of it if you're firing direct, and the stink ain't worth it if your doing smoke roasting. If you're a yankee, use white oak, red oak, hickory, wild cherry......any fruit bearing tree. If you're so blessed as to live in Florida, use Live Oak, **** Oak, Water Oak, Blackjack Oak, ............anything with the tiny leathery leaves on it will work just fine...........as long as it ain't a Magnolia.
