Default Wood forTurkey Smoking

I will be smoking a 30 lb Turkey on my K 7, and I like to know what kind of
wood I should use. I have access to Cherry, Hickory, Mesquite, Apple, and
lots of Balsawood.

First choice would be apple and then cherry. I would put mesquite last. Too
easy to oversmoke with mesquite, IMHO. If you can get pecan, I would put it
between apple and cherry.

Pecan's what I used on the turkey I did Sunday.
Wife & I both think it's pretty good.

I have had wonderful results with apple and pear if you can get it. Cherry
is OK too. I know a lot of people here will disagree but I have had real
good results with hickory. No brining or rub or nuthin', just good smoke at
one hour per pound at 250 F.

Definately, balsawood's the way to go. 2nd choice would be pine.
Needles, cones and branches. Can't beat the flavor.

I think I will try the apple this time as I was knot able to fine pecan and
the balsawood has to much model glue on it.

What would you smoke with balsa wood? Something really light,
I guess -- meringue, or a souffle.
