Default untrimmed brisket - choice or select?

I can either get from import-from-chinas-great-wal-mart select packers
cuts of brisket for 1.67/#, or choice from the usa at a local butcher
for 2.99. Any reasons to go for either, one over the other?

Go for price. End result is the same. To prove it, buy one of each and
cook them together. I'm willing to pay extra for higher grade steak or
roasts, but there is little or no difference in briskets as they are both
tough.

Wal-Mart is importing brisket? If you have an ethical, personal, or moral
problem with Wal-Mart -- and you're a person of principal --- the question
is moot.

Since I have no problem with Wal-Mart at all, I'd go for the least expensive
choice. Unless it is contaminated with Chinese lead paint.

As much as I hate Walmart, their briskets don't come from China.
They come from the same packing plants that 95% of the rest of
America gets their beef.

Buy the Walmart brisket for $1.70. One that hasn't expired
recently.

My Walmart had all their briskets marked down to $1.07/lb today
(they expired tomorrrow). I still resisted the temptation.
Unfortunately, Walmart's brisket doesn't have packing dates, so you
can't tell if it's old until it gets marked down 35%.

I don't think China is a beef eating country. It certainly isn't in Chinese
food, at least Chinese food in China. Throughout the 20th century beef has
been in our Chinese food, beginning in northern California about 1904, or
so. My question would be where are the Chinese buying the beef.

Absolutely. And like Ed said, the result will be the same. Just get
a good shaped piece of meat that will cook well and go on your way.

BTW, if you go to Sam's, they are $1.38 for packers now in our area.

Ask them to bring you out a whole case for you to look at, it will have the
packing date on it.

Happens I bought one of those $1.67/lb briskets from WallyWorld the
other day. They had two. One had nearly 3" of fat on it. The one I took
had at least 2" of fat on it. The label has no meat grade printed on it. I
later found some USDA Choice briskets at my Military Commissary.
They were priced a little higher. Can't remember how much, but they
were not out of sight. The choice briskets looked really good, but alas
I already had one and no space at home for more.

As for reason to choose one or the other. Judge how much fat loss
you're going to have vs price and grade them that way. I don't know
how you determine value, but one criteria of mine is how much food
I net after cooking.

I'd have grabbed a couple. They last in the cryo-vac wrap for a couple of
weeks after the date on the sticker.

Last year WalMart refused to sell me a brisket from the shipment that came
in that day. The packer put the wrong date on them and they were going
back.

Well it turns out I have a childhood friend who recently took over a
local meatmarket. He said he can order me whatever I want/whatever size
I want. I could probably do better with a 7-8# choice brisket and have
a better (albet, also shorter) time smoking than having to wait 16-18
hours smoking a 11-12 # from walmart.

I don't trust a lot of the stuff at Walmart already. Two of the
three briskets on display had lost their vacuum, so those were
definitely out of the question. But I did seriously consider the
third one. because as you say - they last a while in unpunctured
cryovac.

If I was looking to shorten cooking time--would get a nice flat rather then
a small packer---just for the yield--couldn't imagine more than about 3.5lbs
of meat from an 8lb whole brisket--maybe less. Might as well try to
maximize return on your time--imo anyway
