I can either get from import-from-chinas-great-wal-mart select packers
cuts of brisket for 1.67/#, or choice from the usa at a local butcher for 2.99. Any reasons to go for either, one over the other? Thanks in advance! |

I'm willing to pay extra for higher grade steak or roasts, but there is little or no difference in briskets as they are both tough. |

If you have an ethical, personal, or moral problem with Wal-Mart -- and you're a person of principal --- the question is moot. Throughout the 20th century beef has been in our Chinese food, beginning in northern California about 1904, or so. My question would be where are the Chinese buying the beef. Kent |

The one I took had at least 2" of fat on it. The label has no meat grade printed on it. I later found some USDA Choice briskets at my Military Commissary. They were priced a little higher. Can't remember how much, but they were not out of sight. The choice briskets looked really good, but alas I already had one and no space at home for more. As for reason to choose one or the other. Judge how much fat loss you're going to have vs price and grade them that way. They last in the cryo-vac wrap for a couple of weeks after the date on the sticker. Last year WalMart refused to sell me a brisket from the shipment that came in that day. The packer put the wrong date on them and they were going back. |

Two of the three briskets on display had lost their vacuum, so those were definitely out of the question. But I did seriously consider the third one. because as you say - they last a while in unpunctured cryovac. -sw |

If I was looking to shorten cooking time--would get a nice flat rather then a small packer---just for the yield--couldn't imagine more than about 3.5lbs of meat from an 8lb whole brisket--maybe less. Might as well try to maximize return on your time--imo anyway Buzz |
