Went out and got my new WSM the other day. Still waiting for the maiden
voyage because I had to go out of town to tend an ill relative, but I
also picked up a Polder remote probe.

Problemo.

Upon opening the package, I threw the instructions away as I am supposed
to do, but it hit the bottom of the bin face up and something jumped out
at me that said "Do not use for continuous reading thermometer in a
grill or smoker. Use only as an instant read thermometer."

"What the..." I said.

The next line of the instructions said "Take me back for a refund!" Or
perhaps I misread that, but has anyone seen this movie? Who's got a
polder and how do you use yours?

I use them they way you intend to. One potential problem though, is the
probe wire. It will go bad if you pinch it in a closed door or if it stays
in contact with a very hot grill for a few minutes. Or if you close the lid
down on it too hard.

I drilled a hole in the side of my smoker to put the probe through and it
works well that way. The grill has space on the side that is not in contact
and I just make sure the wire is off the grate. With care, it will last for
years. OTOH, I've go through quite a few probes do to the problems I
mentioned.

Sounds like the lawyers are trying to ward off complaints from careless
customers.

I've never owned a Polder. I have a pair of no name thermometers which
I suspect are Oregon Scientific basards. The have woven shield probe
wires. They're already several years old. Theyve never suffered a probe
failure. I'm very carefull to not slam a lid on them or let them remain
in contact with a direct heat source. I did have a previous cable probe
therm failure, but it was the main unit that failed. Can't remember what
brand it was.

Is this a remote or corded Polder probe? If corded, is it wire
or silicone around the wire?

If the answer if corded-wire, then screw them. Plenty of us have
been using them that way for years. I haven't tried the silicone
probe wires in the smoker.

Thanks to all for the responses. It is as I thought, just a legal
disclaimer. This has the braided steel cover over the wires, and I would
bet a fibreglas insulator under that. With care, I will go ahead and use
it as is. That way, if it takes a shit I can blame you guys!

Do note that there's also (in the directions I didn't read) a
statement about not using it in temps of 394 F or higher. My GF
killed her probe first try, using it in her grill.

Yeah, I didn't read that part either.

That being the case, lets get in a little disclaimer.

Do not slam a lid on the cable. You can close a lid on the cable,
but you cannot pound on it.

Do not get the cable wet. Specifically, do not get the joint between
the cable and the probe wet.
