Thanks for all the replies below!!

One more question. Going to be approx. 30 people. There'll be lots of
other food as well, wings, pizza, lots of beer of course... *g* How many
racks of ribs should I look at doing?

Depends on the makeup of the group. All men? Men and women? Kids? If
the ribs aren't the centerpiece of the meal, I would figure on 2 ribs
per person, 3-4 if it's a group of all men.

Default One more Q on Ribs...

A "normal" serving of baby-back ribs is 1/2 rack per person where ribs
are the main course.

Spares, right? KSW covered the variables fairly well--I'd say 2-3
ribs per person. What's that work out to? Something like 8 or so
ribs to the rack? 8-10 racks then. But my guess as to how many ribs
to the rack is likely low. Maybe more like 10--then 6-8 racks.
(note that too many is better than not enough--you won't have any
trouble finding good uses for any leftover ribs...g)
