Are there any baking cookbooks dating from the early part of the 20th
century (or earlier) that are considered classics in the field? Any
early pioneers in the field?

There's the Lion House Cookbook, but that's literal pioneers, often in
literal fields. In utah.

Boston Cooking School

Fanny Farmer

They're different books, even though Fanny Farmer wrote some of the
Boston Cooking School books.
