Carrot Cake

1 cup Pitted prunes
3 tablespoons Water
4 cups Carrots ; coarsely shredded
2 cups Sugar
2 teaspoons Vanilla
4 Egg whites
8 ounces Unsweetened crushed
Pineapple ; drained
2 cups Flour
2 teaspoons Baking powder
1 1/2 teaspoons Cinnamon
1/2 teaspoon Baking soda
3/4 cup Coconut

Preheat oven to 375 degrees F. Coat a 9"x13" baking dish with fat-free
cooking spray. Place prunes and water in a food processor or blender;
process until smooth. Combine prune puree, carrots, sugar, vanilla, egg
whites, and pineapple; mix well. Sift together flour, baking powder,
cinnamon, and baking soda. Stir into carrot mixture, stirring just until
moistened. Gently stir in coconut. Spoon batter into prepared pan. Bake 45
minutes; cool on a wire rack. From: "Gladys Dinletir"

1 ts Ground cinnamon
1 ts Ground allspice
1/2 ts Freshly grated nutmeg
1/4 ts Ground cloves
1 1/2 c Whole wheat pastry flour
1/3 c Wheat bran
1 1/2 ts Baking powder
1 ts Baking soda
1 c Grated carrots
1 c Raisins or other dried
Fruit
3/4 c Honey
1 1/2 c Water

Preheat the oven to 350 degrees F. Combine all the dry ingredients and mix
well. In a separate bowl combine the liquid ingredients. Fold the dry
ingredients into the wet ones and mix well. Do not overbeat or mix. Pour
into a non-stick 9x5x3 inch loaf pan. Bake for 1 hour and 15 minutes, or
until a toothpick comes out clean. This recipe appeared in Dr. Dean
Ornishs Program for Reversing Heart Disease. Serving size = 1 slice 191
calories 0.6 grams total fat trace saturated fat 0 milligrams cholesterol

23:22:00 GMT Beat eggs, add oil, buttermilk, vanilla, and sugar. Beat

1 1/2 cups of oil! i've been doing web searches but so far haven't come up
with one i want. thanks all
