Default Looking for biscotti recipes

I am looking for recipes for biscotti without nuts. It seems that
every recipe I have found has almonds, walnuts, hazel nuts, etc.
Looking especially for any recipes that are chocolatey, lemony or
orange flavored. Thanks very much.

Choco Cran Biscotti

1 cup dried cranberries
3 tablespoons prepared orange juice
1/4 cup butter or margarine -- softened
1/2 cup sugar
3 large eggs
2 cups all purpose flour
1/3 cup cocoa
1 teaspoon baking powder
1/4 teaspoon salt

Combine cranberries and orange juice in microwave-safe dish. Cover.
Microwave on HIGH (100%) for 1 minute. If cranberries are not soft, heat for
30 second intervals until softened.
Cream margarine, sugar and eggs together in large bowl until smooth. Add
cranberry mixture. Stir.
Add flour, cocoa, baking powder and salt. Mix well.
Turn out onto lightly floured surface. Knead 6 times. Place on greased
baking sheet.
Shape into 16-inch long log, that is 1 1/4-inches in diameter.
Bake in 350ºF oven for 30 minutes. Cool on wire rack for 10-15 minutes.
Reduce oven temperature to 275ºF.
Cut rolls diagonally into 1/2-inch slices. Arrange on same baking sheet.
Bake for 10-12 minutes. Turn slices over. Turn off oven. Let stand in oven
for 30 minutes until crisp.

Chocolate-Dipped Orange Biscotti

2/3 cup sugar
1/2 cup vegetable oil
1 tablespoon grated orange peel
1 1/2 teaspoons vanilla
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 ounces semisweet chocolate -- melted

Heat oven to 350F.
Mix sugar, oil, orange peel, vanilla and eggs in large bowl.
Stir in flour, baking powder, baking soda and salt.
Knead dough on lightly floured surface until smooth.
Shape half of dough at a time into rectangle, 10 x 3 inches, on ungreased
cookie sheet.
Bake 25 to 30 minutes or until toothpick inserted in center comes out clean.
Cool on cookie sheet 15 minutes.
Cut crosswise into 1/2-inch slices. Place slices cut sides down on cookie
sheet.
Bake about 15 minutes, turning once, until crisp and light brown.
Immediately remove from cookie sheet.
Cool on wire rack.
Dip one end of each cookie into melted chocolate. Place on waxed paper until
chocolate is firm.

Double Chocolate Chunk Biscotti

1/3 cup butter or margarine
2/3 cup sugar
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
2 eggs
1 3/4 cups flour
4 ounces white baking bar -- coarsely chopped
3 ounces semisweet chocolate -- chopped

Lightly grease a large cookie sheet. Set aside.
In a large mixing bowl beat butter with an electric mixer on medium speed
for 30 seconds. Add sugar, cocoa powder and baking powder. Beat until
combined. Beat in eggs. Beat in as much of the flour as you can. Using a
spoon, stir in any remaining flour, white baking bar and semisweet
chocolate.
Divide dough in half. Shape each half into a 9" long log. Place log about 4"
apart on prepared cookie sheet. Flatten logs slightly until about 2" thick.
Bake logs in a 375 degree oven for 20-25 min. or until a wooden toothpick
inserted neat the centers comes out clean. Cool on the cookie sheet set on a
wire rack for 1 hour.
Using a serrated knife, cut each log diagonally into 1/2" thick slices. Lay
slices, cut side down, on ungreased cookie sheets.
Bake slices in a 325 degree oven for 8 minutes. Turn slices over.
Bake 7-9 minutes, or or until slices are dry and crisp. (Do not overbake.)
Transfer to wire racks and let cool. Store in an airtight container at room
temperature for up to 1 week or freeze for up to 3 months.

Orange Biscotti

1/8 teaspoon salt
1/2 teaspoon baking powder
4 tablespoons butter -- cut into small pieces
1 egg
1 teaspoon orange zest
1/2 cup powdered sugar
1 1/2 tablespoons orange juice

Mix together the flour, sugar, salt and baking powder. Blend in the butter
until a meal-like texture forms.
Beat the egg. Add the zest and egg to the mixture until a dough forms. Knead
briefly.
Roll the dough into a 12-inch cylinder. Place on parchment paper on a cookie
sheet.
Bake at 350 for 30 minutes. Cool slightly.
Cut, on the bias, into 1/2-inch wide slices. Place the slices on the
parchment and bake for 20 minutes longer.
Combine the powdered sugar and orange juice. Brush onto the biscotti. Cool
before serving.

Preheat oven to 350 degrees.
Lightly spoon flour into dry measuring cups, and level with a knife.
Combine the flour, sugar, toffee bits, brown sugar, and baking powder in a
large bowl.
Combine vegetable oil, vanilla, and eggs.
Add to flour mixture, stirring until well-blended (dough will be dry and
crumbly).
Turn the dough out onto a lightly floured surface, and knead lightly 7 to 8
times.
Divide dough in half. Shape each portion into an 8-inch-long roll.
Place rolls 6 inches apart on a baking sheet coated with cooking spray, and
flatten each roll to
1-inch thickness.
Bake at 350 degrees for 35 minutes. Remove rolls from baking sheet. Cool 10
minutes on a wire rack.
Cut each roll diagonally into 15 (1/2-inch) slices. Place slices, cut sides
down, on baking sheet.
Reduce oven temperature to 325 degrees.
Bake 10 minutes. Turn cookies over.
Bake an additional 10 minutes (cookies will be slightly soft in center but
will harden as they cool). Remove from baking sheet. cool completely on wire
rack.

White Chocolate-Cranberry Biscotti

In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating
well after each addition. Beat in vanilla.
Combine flour and baking powder. Gradually add to creamed mixture. Stir in
cranberries and vanilla chips.
Divide dough into 3 portions. On ungreased baking sheets, shape each portion
into a 10x2" rectangle.
Bake at 350 degrees for 20-25 minutes or until lightly browned. Cool for 5
minutes.
Transfer to a cutting board. Cut diagonally with a serrated knife into 1"
slices.
Place cut side down on ungreased baking sheets.
Bake for 15-20 minutes or until golden brown. Remove to wire racks to cool.
Store in airtight container.

Vanilla Bean Biscotti*

1 vanilla bean, split -- OR
2 teaspoons vanilla extract
3 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 large eggs
3/4 cup sugar
1/2 cup butter or margarine -- melted and cooled

Scrape seeds from vanilla bean, if using. (Reserve bean for another use.)
Heat oven to 325 degree F. Arrange oven racks in center and lower thirds of
oven. Grease a large cookie sheet. Combine flour, baking powder and salt in
bowl. Set aside.
Beat eggs in mixer bowl at medium-high speed, 1 minute. Gradually beat in
sugar.
At low speed, beat in butter and vanilla seeds or vanilla extract, if using.
Beat in dry ingredients just until blended. Divide dough into thirds.
On a lightly floured surface, roll each piece into a 14x1-1/2-inch log.
Arrange logs 2-1/2 inches apart on prepared cookie sheet.
Bake logs on bottom oven rack 30 to 35 minutes, until firm. Cool on pan on
wire rack, 15 minutes.
Reduce oven temperature to 275 degrees F. Carefully transfer logs to a large
cutting board.
With serrated knife, gently slice each log diagonally into 1/2-inch-thick
slices.
Arrange slices cut side down 1 inch apart on two large ungreased cookie
sheets.
Bake slices 30 minutes, switching and rotating cookie sheets after 15
minutes, until pale golden. Cool on wire racks.

Make-Ahead Tip: Prepare as directed above. Cover and cookies in an airtight
container at room temperature up to 2 weeks.
