I purchased 20 organic vanilla beans on ebay for a really good price.
I've never baked with the beans before, just the extract and would like to know how to store them. They came vacuum packed and I had to cut the package open to count them. They are about 6-7" long and very wrinkly and oily. I could smell them even before I opened the envelope they were shipped in. I don't plan on using them all right away, so how can I keep them so they don't lose their flavor? Thanks. |

I normally keep them wrapped up in clingfilm in the fridge short term or in the freezer long term.

Some of the oil will migrate into the sugar, but the flavor of the beans should stay intense. Glass jar, lots of sugar, beans. Store cool and dark. Good for a long time. Pastorio |
