Hi -
Does anyone have good ideas on how to fix a dish that has too much salt in it? I failed to rinse some celery enough after salting it to remove moisture, and the dish as a result was too salty. I still have lots of leftovers, but don't want to cook the ingredients much more, since it would make the veggies too soft. The only advice I found was here - http://www.ochef.com/333.htm, and it suggests a little lemon. Their potato solution won't work here. Maybe adding potato powder and water would help..... Anyway, any tried and true solution welcomed. Thanks, Ian |

Sugar, in addition to the lemon, brings up the sweet and sour, Roxie's suggestion of beer, if it's bitter enough, rounds out the cure. Good judgement comes from experience. Experience comes from bad judgement. Don't ask how I learned that. I've heard people say you can throw a peeled potato into stews and soups and it will absorb some salt. Then remove the potato. Never tried it, cuz I like things salty. Well, the dish was too far gone for such simple remedies. I ended up cooking a whole lot more veggies (about the same gross weight), which I seasoned hardly at all, then mixed it with the salted mess. The result was fairly bland, but OK, and now amenable to balancing spices. I will NEVER use that celery salting trick again! Thanks for the advice! Ian |
