Default Salad dressing

In many small asian restaurants I've eaten in, they will serve a small
lettuce salad (usually head lettuce) with a peanut butter-tasting salad
dressing over it. I have looked thru many cookbooks and on line for this
dressing, but can't find anything that looks like it would have the
ingredients that I can imagine would go into it; i.e. peanut butter, rice
wine vinegar, some kind of oil perhaps other than in the peanut butter.
Perhaps I have seen this in Japanese restaurants that Korean, Chinese, etc.


Any ideas?

Try Indonesian or Malaysian salad by the name of Gado Gado. It uses a peanut
sauce dressing. It's been around for years... like satay & i won't be
surprise the peanut dressing you've had are are based on this or maybe a
Thai peanut dresing.

I think it's a Miso dressing. I'll look for a recipe at home and post it if
I find it. Google, "Sam Choy, miso salad dressing" and see what you get in
the mean time. The peanut butter taste comes from sesame seeds or oil, I
believe.

Below is the Sam Choy recipe that I was thinking of. No miso but sesame for
the peanut taste.

Creamy Oriental Dressing

Three cups mayonnaise
One half cup soy sauce
Three quarter cup granulated sugar
One quarter teaspoon white pepper
One and one tablespoon black sesame seeds
One tablespoon sesame oil

Whisk all of the ingredients together until well blended. If consistency is
too thick, whisk in a few drops of water at a time, until you get the
consistency you desire. Makes 4 cups.

Very similar to the dressing served in Japanese restaurants over iceberg
lettuce. Also good on a tossed salad or as a marinade for chicken or
seafood. Most any silken tofu will work in this recipe from an older issue

1/2 cup grated carrots

1/2 cup silken tofu

2 tablespoons fresh lemon juice

1 tablespoon rice vinegar

1 tablespoon vegetable oil

2 tablespoons yellow miso (soybean paste)

2 teaspoons peeled chopped fresh ginger

1 teaspoon honey

1/4 teaspoon sea salt or table salt

1 clove garlic, crushed

It seems like the tofu might be a substitute for something else in the real
recipe I'm looking for, but the carrots are something that is probably in
the recipe I recall, as the texture and color was that of a carrots put in a
cuisinart, but the actual dressing color is a little lighter carrot-color.

It might be Mitsukan Sesame Salad Dressing.

I just found out that I can simulate hot and sour soup by adding this
and some hot oil to a regular broth that's been thickend just a little.
Don't serve it to guests. It's just for the cold days when
hot-and-sour would be good.
