I'd still put it in water. Change the water daily or every couple of
days, and when you change the water, give it a sniff. As long as it
doesn't smell sour, you should be ok (and when it first starts to smell
sour, it's usually still ok as long as you use it right away and cook it
thoroughly). A week is the average shelf-life, although I've had some
last longer, and some not last that long.
