Vegetarian "meatloaf"

Many years ago, I had a recipe for a really great "meatloaf". I've moved
several times, and it is lost. :-( I'm hoping that someone, somewhere, has
the recipe, or a similar one.
The one I loved had brown rice, grated cheddar cheese, egge, I believe crushed
walnuts, onions, peppers... and other stuff. Sound familiar?
One thought is to make seitan, add all that stuff into the dough, and
add some extra flour as well.
I noticed the first time I made seitan from flour, I didn't wash off
the starch sufficiently and it came out kinda like a cross between
chewy seitan and bread.
Since then I've learned my lesson and use straight gluten, much less
time consuming and it works.
But I've considered at times adding some flour back in and making
'meatloaf'.
