req: potato soup

Can someone tell me how to make potato soup? It seems like a no-brainer,
but I don't know anything past cooking the potatoes. :-) TIA

I made this the other night because it looked so easy and it turned out
great! I modified the recipe at

Leek, Potato, and Spinach Soup

Date: Mon, 16 Aug 1993 00:51:44 GMT
2 tablespoons olive oil
4 cups water or veggie broth (I used water and a cube of veggie
boullion)
1 cup leeks, sliced (I used the white and tender green parts only)
1 1/2 lbs. (4 - 5 medium) potatoes, sliced
6 cups fresh spinach, coarsely chopped
Curry powder to taste
In 3-quart saucepan, add olive oil to 1 cup water.
Add leeks and simmer, covered, over low heat for 5 minutes.
Add potatoes and remaining 3 cups water and simmer until potatoes
are tender, about 25 minutes.
Just before serving, stir in spinach and simmer gently for 5 minutes
Add curry powder to taste and salt and pepper if desired
Serve hot and garnish with sour cream, if desired (I ate it without,
and it was yummy).
