Default Will this jam mellow?

I don't know if it will mellow or not. I tend to find that the
flavors in my preserves tend to be pretty close to what they are when
they are processed, that is, after the BWB. The only exception to this
I've found are vinegary things. Then again, we tend to use things up
pretty quickly around here, so maybe we just don't get a chance to find
out.

Just a quick question about your name, though. Do you mind telling
me where you grew up? I knew a Ceridwen in school, and didn't think it
was a common name in the US. Of course, you might not be in the US, but
since I didn't see a UK after the yahoo, I wondered.
