I'm still looking for a chicken place which advertises that it uses
premium birds. Premium poultry does exist, of course.

Steelhead Diner, Seattle. Advertises (on its menu) Washington-sourced
chicken, particularly Walla Walla chicken. Also mentions sausage from
a local sausage maker among other things.

Several Seattle-area restaurants feature sausage from Salumi, and note
it on their menus. Steelhead Diner features Armandino's bresaola.

I could go on, but I won't.
