Default Knife Sharpeners

I have a Model 110, and it works fine, though I seldom use the third
'final' stage. It seems that the small amount of 'tooth' left on by the
second stage helps, at least with my chef's knives.

I recently spoke to a cooking store owner, who also runs a knife
sharpening business, and he says the model 120 is better, but not enough
for me to chuck my 110 for.

Hello

I'm seeking opinions on the electric knife sharpeners made by Chef's Choice.

Naturally, their ads claim that they do a wonderful job, but I'd sure
appreciate some unbiased recommendations as to how well they work !

Check with the guys in alt.food.barbecue... There's a lot of expertise
in both knives and sharpeners in that group...
